Ingredients

For caramelized onions

  • 3 onions, slivered
  • 3 slices thick-cut bacon, chopped
  • 3 cloves garlic
  • 3 sprigs fresh rosemary
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper

For aioli

  • 1/4 cup mayonnaise
  • 1 clove garlic, grated
  • 1 teaspoon lemon juice
  • Kosher salt and ground black pepper to taste

For the burgers

  • 1 1/2 pounds ground beef
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 4 brioche or good-quality burger buns, split, buttered, and toasted
  • 1/2 cup blue cheese crumbles
  • 1 cup arugula

Directions

1. For the caramelized onions, preheat the oven to 375°F. Arrange the onions, bacon, garlic, and rosemary on a large rimmed baking sheet. Top with the butter, olive oil, salt, and pepper, and cover the baking sheet with foil. Place the baking sheet in the oven and roast for 1 hour, stirring every 20 minutes, until the onions are soft and beginning to turn golden. After 1 hour, remove the foil, stir, and return the onions to the oven for 15 minutes. Remove onions from the oven. (Onions may be caramelized up to 2 days ahead and chilled. Bring to room temperature before serving.)

2. For the aioli, stir together the mayonnaise, grated garlic, and lemon juice together in small bowl. Refrigerate the aioli until ready to serve. (Aioli may be made up to 2 days ahead.)

3. For the burgers, mix the ground beef with the salt and pepper in a large bowl. Shape the ground beef into 4 patties, each about ½ inch thick. Preheat grill to medium-high; lightly coat grill grates with nonstick spray. Grill burgers on one side for 5 minutes, then flip with a spatula, top each burger with 2 tablespoons blue cheese. Cover the grill and continue to cook the burgers to desired doneness, about 5 minutes more for medium.

4. To serve, spread some of the garlic aioli on both sides of each toasted bun, then arrange some of the arugula on the bottom half of each bun. Top the arugula with a burger, then top the burger with some of the caramelized onions. Place the top of the bun on each burger and serve immediately.
